Cheese - the white gold
Looking to extend the durability or "shelf life" of milk, the secret of cheese-making was discovered a long time ago. Especially on Alpine pastures and mountain farms, it was important to find a way to store and transport the milk produced by cows and goats.
With time, many different types of cheeses were invented, which are produced either from fresh whole milk or skimmed milk. Then they are stored, mostly in dark cellars, which is a key phase in determining the quality of the finished product.
Today, alpine cheese, grey cheese ("Graukäse") and many other South Tyrolean cheese specialties are produced on the pastures and mountain farms of Alta Val di Non/Deutschnonsberg.
